Lillà rice with zucchini Julienne, burrata and crispy speck

Ingredients for 4 people:

400 g Lillà rice

0.8 l water

2 courgettes

100 g speck

1 burrata

Extra virgin olive oil

salt and pepper to taste

Preparation:

Bring the water to a boil in a saucepan, add a pinch of salt and add the rice.

Cook for 18 minutes on low heat. Wash and julienne the courgettes.

In a pan, sauté a drizzle of extra virgin olive oil and add the speck. Cook for a few minutes until lightly browned.

Add the courgettes to the speck and cook for a few minutes.

At the end of 18 minutes, drain the rice, add speck and zucchini and serve. Finish with a heart of burrata, pepper and salt to taste.
