RISOTTO WITH ORATA FILLET AND GINGER
Ingredients for 4 people:
- 400 gr. Vialone Nero Ancient Variety Rice
- 1 l of vegetable stock
- 400 gr. of orata fillets
- 1/2 ginger root
- 1 garlic slice
- 1/2 glass of white wine
- 1 knob of butter
- 1 tuft of parsley
- Extra Vigin Olive Oil
- Salt and pepper
PREPARATION:
Roughly cut orata fillets, previously removed from leather, and gently cook them in a pan with some olive oil and a slice of garlic, for a few mintues. Remove the garlic and brown fillets simmering with white wine until reduced, add salt and pepper to taste. In a pot boil 8 dl of broth and pour the rice, mix it and cover it. Bring the rice to boil and cook on a low heat, after 5 minutes add orata fillets. At the end of cooking add shaved ginger and butter, then blend until creamy. Serve it with a sprinkle of fresh parsley, an orata fillet and some shaved ginger.
